Chia seeds are rich in protein, antioxidants and omega 3, as well as many other nutrients That means they’re great for digestion (and keep things moving), they’re great for heart health, they help balance blood sugar and they’re great for bone health. Long story short, they’re good for you!

Packed with healthy fats, fibre, and a burst of flavours, this smashed avocado will satisfy your cravings and provide a nutritious kick-start to your morning. Avocados are a good source of fiber, and contain more fat (the good kind) than carbohydrate, so are popular on lower-carbohydrate diets such as with diabetes. Their heart-friendly fats do not increase blood cholesterol, which can provide satisfaction on a traditional cholesterol-lowering diet that is often low in fat and cholesterol. It is one the highest-fat plant foods, making it a popular inclusion in vegan and vegetarian diets.

King Mushrooms on toast

It’s an ultimate breakfast! Tasty king mushrooms layed on a bed of hummus over toasted bread. King oyster mushrooms, also known as king trumpet mushrooms or French horn mushrooms. Unlike many mushrooms, whose stems become tough and woody, king oyster mushroom stems are firm and dense but completely edible. Indeed, slicing the stems into rounds and sautéeing them yields something resembling sea scallops in texture and appearance, which is why they're sometimes referred to as vegan scallops.

Tofu is a good source of plant-based protein that can be used in all sorts of ways. It’s a great addition to vegetarian and vegan diets, but even if you’re a meat eater, I urge you to try it. In my tofu recipes, I don’t use it as a meat substitute, but rather as something unique and delicious in its own right!
